Bar None



Finding the paddle attachment of my KitchenAid in my tupperware cabinet inspired me to bake. I rooted through our pantry and found chocolate chips, dried cherries, and oatmeal. Add butter and the usual suspects and the *Bar None* was born. Read on for the recipe:

1 1/2 c all purpose flour
1 t baking soda
1 t cinnamon
1/4 t salt
1/4 t freshly grated nutmeg
1/4 t ground cloves
1 3/4 c old fashioned rolled oats
1 c butter, softened
1 1/2 c dark brown sugar, packed
2 large eggs
1 t vanilla
Grated peel of one orange
1 c dried cherries (you can probably use raisins, cranberries, your favorite dried fruit)
12 oz semisweet chocolate chips

Preheat oven to 350. Combine flour, baking soda, salt, spices, and oatmeal; set aside. Cream butter and brown sugar until light and fluffy. Beat in eggs, vanilla, and orange peel. Gradually mix in flour mixture on low speed until combined. Stir in dried fruit and chocolate chips. Spread in greased 9X13 pan. Bake for 25-30 minutes. Cool and cut into bars.

oh yum. And here I thought I was having a wierd midweek baking thing going on - Had more experiments :D updating to blog this weekend probably

This is not a Cooking Light candidate but who cares. You should also share your blueberry cheesecake bar recipe - it is one of my favorites.
